Microsoft keeps 365 running. It doesn’t keep a separate copy of your data that you control. When a mailbox is purged, a SharePoint site is overwritten or ransomware encrypts OneDrive, you need a backup that lives outside your tenant.

Once an item leaves Deleted Items, Exchange Online keeps it for 14 to 30 days. After that it's gone for good.
SharePoint and OneDrive keep deleted files for 93 days, then purge them automatically.
When a laptop gets encrypted, OneDrive syncs the damaged files over the good ones. A backup outside your tenant is the copy that's still clean.
Removing a user's license starts a 30-day clock on their mailbox and OneDrive. Miss it and their data is gone.
